Blueberry Sauce (Boosts Immune System)

12 ounces of frozen blueberries (3 cups)

2 T maple syrup or stevia

½ tsp vanilla extract

1/8 tsp kosher salt

¼ tsp ground cardamom

Cook over medium-high heat stirring occasionally, until fruit thaws and breaks down (5-10 minutes). Wisk in 2 tsp cornstarch and boil, whisking until sauce is glossy and thickened (1 minute). Serve over plain low sugar yogurt, pancakes, waffles, or low sugar ice cream. Keep in refrig.

Kale Salad with Lemon Vinaigrette

​1/3 cup whole natural almonds

1/4 cup extra virgin olive oil

3 Tbs. fresh lemon juice

1 Tbs. honey

1/4 tsp salt

1/4 tsp. pepper

10 cups chopped kale

1/3 cup sweetened dried cranberries

2/3 Parmesan cheese shavings

Heat skillet over medium heat. Add almonds, cook, stirring occasionally until lightly toasted.

In large bowl, whisk together oil, lemon juice, honey, salt and pepper,.  Add kale and cranberries. Coarsely chop almonds. Add to salad and toll until kale is coated with dressing.  Top with Parmesan shavings.
